Baked Lemon Pasta with Chicken - Our Kind of Wonderful

Baked Lemon Pasta with Chicken

This baked lemon pasta with chicken is such a refreshing alternative to the regular pasta meals we have. If you aren’t big on lemon then you can simply scale back a bit on the lemon, and maybe add some more garlic. We served ours with some grilled chicken breasts that were seasoned with Salad Supreme seasoning, and it was perfect!

Baked Lemon Pasta with Chicken - Our Kind of Wonderful

Ingredients

1 pound thin spaghetti

4 Tbsp. unsalted butter

2 Tbsp. olive oil

2 cloves garlic, minced

1/2 lemon, juiced and zested

2 cups (heaping) sour cream

1/2 tsp. salt, or more to taste

Grated parmesan cheese

Flat-leaf parsley, chopped

2 grilled chicken breasts with salad supreme seasoning

Instructions

Preheat oven to 375 degrees.

Cook your spaghetti noodles according to package directions.

Melt butter with olive oil over low heat in a skillet. Once melted add in the minced garlic and squeeze lemon juice into the pan; turn off the heat.

Add your sour cream, lemon zest, and salt and stir it all together. Pour the mixture over your spaghetti noodles (that you have drained) and stir together. Cut up your grilled chicken into bite size pieces, then add them to the noodle mixture. Move them to an oven safe dish.

Cover and bake for 15 minutes, then bake for an additional 7-10 minutes uncovered.

Top with parmesan cheese and parsley. Enjoy!
