Cajun Blackened Catfish - Our Kind of Wonderful

Cajun Blackened Catfish

K (the husband) is a huge seafood fan, and I recently learned of his love for catfish. Finding catfish locally proved to be tricky, but I found that Smith’s carries it! They have it frozen, and sometimes fresh as well, so K has been in a little bit of catfish heaven.

He has had this cajun blackened catfish recipe numerous times, pairing it with potatoes and beans, or having it for breakfast with eggs. Anything he can’t eat the dogs are more than happy to gobble up.

Cajun Blackened Catfish - Our Kind of Wonderful

Ingredients

1 tsp. ground black pepper

1 tsp. garlic powder

1 tsp. onion powder

1 tsp. paprika

1 tsp. dried parsley

1 tsp. ground cayenne pepper

1 tsp. kosher salt

1/2 tsp dried oregano

1/2 tsp. dried thyme

2 large catfish fillets, skinned (if frozen be sure to thaw first)

Preheat the oven to 450 degrees.

In a bowl mix together the dry ingredients until combined. Take the catfish fillets and coat them thoroughly with the spice mixture.

Spray a baking dish with non-stick spray, then add the catfish fillets to the baking dish. You don’t want the fish to overlap, so be sure to use a dish large enough to allow for that. Bake at 450 degrees for 11 minutes, or until done. You’ll know the catfish is done when it turns a light color and breaks apart with a fork with little resistance. You want a little resistance, if it breaks apart with no resistance then it means you overcooked it.
