Copycat Cajun Chicken Pasta
Originally I thought this recipe was going to be boring, and a one and done type of deal. However, it’s quickly become a favorite, and one of our go to recipes for a tasty, yet easy dinner.
Ingredients
8 oz penne pasta, cooked and drained
2 boneless, skinless chicken breasts
4 tsp. cajun seasoning
4 Tbsp. butter
3 cups half and half
1/4 – 1/3 cup flour, as needed to thicken the sauce
1/2 tsp. lemon pepper seasoning
1 tsp. salt
1 tsp. black pepper
1/4 tsp. garlic powder
Red Pepper flakes, as desired
2 tomatoes, diced (if desired)
1/2 cup parmesan cheese, shredded
Instructions

Cook pasta according to the directions on the box, then drain and set aside.

Grab your raw chicken, and with your hand rub the cajun seasoning over the chicken.

In a large skilled saute the breasts in 2 Tbsp. of butter over medium heat, turning as you cook until they are cooked through.

In a separate skilled mix together the half and half, 2 Tbsp butter, lemon pepper, salt, black pepper and garlic powder over medium heat, stirring periodically. When the mixture starts to bubble remove from the heat, stir in flour and parmesan cheese and then pour it over the cooked noodles.

Slice your cooked chicken breasts into strips and top your pasta and sauce with chicken strips, then sprinkle with diced tomatoes and red pepper flakes. Enjoy!
