Cranberry French Toast
Breakfast is honestly my weakest area cooking wise, we do the same 4-5 recipes most of the time, and there isn’t much variety. Then, cranberry french toast happened, and we now have another breakfast to add to our rotation! These are so good, but quite filling, so be sure to pace yourself.
Ingredients
6 oz fresh cranberries
1/4 cup maple syrup
4 Tbsp. brown sugar
1/2 tsp. cinnamon
4 thick slices of Italian bread
2 eggs
1 Tbsp milk
1 tsp. vanilla
1/4 tsp. cinnamon
1/2 Tbsp brown sugar
Powdered sugar, as desired
Instructions

Combine cranberries, maple syrup, brown sugar and cinnamon in a small sauce pot over medium heat, simmer for 15 minutes. Turn to low while you cook the french toast.

Preheat a large cooking pan over medium heat and lightly grease it.

In a bowl large enough to dunk your bread, whisk eggs, milk, vanilla, cinnamon and sugar until smooth.

Dip bread in egg mixture on both sides a couple of times.

Place bread in the pan and cook for a few minutes on each side, until nicely golden brown and firm to the touch.

Plate French Toast and top it with cranberry topping, then sprinkle powdered sugar on top.
