Cranberry Sour Cream Bars
We are cranberry addicts all year round, but for those of you that are fair weather cranberry fans, cranberries are easy to find around the winter holidays– Costco has them – so you should definitely stock up and try these delicious bars! We prefer them after they’ve sat in the fridge over night, but they are delicious either way.
Ingredients
1 cup butter, softened
1 cup packed brown sugar
2 cups quick cooking oats
1½ cups flour
1 cup sour cream
–Filling–
¾ cup sugar
1½ cups dried cranberries
2 cups fresh cranberries
1 egg
2 tablespoons flour
1 lemon, zested
Instructions

Preheat oven to 350 degrees.

Cream together butter and brown sugar. Add oats and flour and mix until well combined.

Set aside 1½ cups of oat mixture for topping. Press the remaining mixture into a greased 9×13 pan. Bake 12 minutes.

Meanwhile, combine sour cream, cranberries, egg, flour, lemon zest and 2 teaspoons lemon juice in a small bowl.

Spread over crust. Sprinkle with reserved topping. Bake an additional 23-26 minutes or until lightly browned. Cool completely and cut into squares. Store in the fridge. We prefer them the next day, but they’re delicious either way!
