Greek Chicken Bowls
This recipe was one of those lucky finds that I kept putting off on adding to our meal plan, but I’m so glad I did! K loves this, and I even like it, which is huge as I’m not a huge fan of greek food, but this recipe is great. And, not even kidding, it’s so easy – this is one you definitely want to try!
Ingredients
–Chicken–
2 lbs. boneless, skinless chicken breasts
1/4 cup olive oil
3 Tbsp. minced garlic
1/3 cup lemon juice
1 Tbsp. red wine vinegar
1 Tbsp. oregano
1/3 cup plain greek yogurt
pepper, to taste
–Salad–
2 English cucumbers, peeled and sliced into fourths
1/3 cup lemon juice
2 Tbsp. olive oil
1 Tbsp. red wine vinegar
1/2 Tbsp. minced garlic
1/2 tsp. oregano
–Tzatziki Sauce–
1 cup plain Greek yogurt
1 English cucumber, finely diced
1 Tbsp. minced garlic
1/2 Tbsp. dried dill
1 Tbsp. lemon juice
1 tsp. lemon zest
–Other–
4 cups cooked rice
1 1/2 cups cherry tomatoes, halved
1/2 cup red onion slices

Combine all chicken ingredients in a plastic bag. Massage to mix. Be sure the chicken is fully covered, then refrigerate for at least 20 minutes, up to 12 hours.

Drain the chicken from the marinade, discarding the marinade.

Heat olive oil over medium high heat. Once the pan is hot add the chicken, being sure to flip part way through. You’ll want to cook about 5 minutes per side – cooking time will vary depending on how thick your chicken breasts are. Once chicken is cooked through remove from the pan and let cool.

Once your chicken has cooled cut it into bite size pieces.

While the chicken is cooling make the cucumber salad. Peel and cut the cucumbers into fourths, then toss them into a bowl with the lemon juice, olive oil, red wine vinegar, garlic, and oregano. Put in the fridge until ready to eat.

Now you’ll make the sauce. Combine the greek yogurt, chopped cucumber, garlic, dill, lemon juice, and lemon zest in a small bowl, then add pepper, to taste. Put in the fridge until you’re ready to eat.

Cook your rice according to package directions.

To serve, put rice on the bottom, then layer with chicken, sauce, salad, halved tomatoes, and chopped red onions.
