Grilled Artichokes with Cheese
Artichokes intimidate me in the kitchen. I don’t know how to cook them, I don’t know if the purple stuff in the middle is actually poisonous, and cutting them is more complicated than I like. I made them once before because they came in my Bountiful Basket, and I just boiled the artichoke then dipped it in melted butter. We ended up getting more artichokes from Bountiful Basket. CRAP. Then, I tried this, and holy heck, are they good! These are sooo easy, you definitely want to give them a try. Trust me.
Ingredients
1 artichoke
Shredded Romano Cheese, to taste
Instructions

Cut the artichoke in half, then boil in water for about 10-15 minutes.

Take the artichoke out of the water and let cool completely, then scoop the purple innards out. Once you have scooped the purple stuff out take the shredded Romano Cheese and put some between each layer of the leaves.

Put them on the grill, turning them, until the cheese melts. It just takes a few minutes, so watch them closely as to not overcook.
