Grinch Cookies
It’s a Christmas tradition with K (the husband) to watch The Grinch, and each year I make him green Grinch cookies. As Christmas is in just a few days I need to get on the ball, so I’ll be whipping up some Grinch cookies as a surprise, and we’ll be cuddling up to a midnight movie, along with Grinch cookies and milk for him, and Oreos for me.
Ingredients
3/4 cup butter, softened
2 eggs
1 tsp. vanilla extract
2 1/4 cups flour
1 small package (3.9 oz) vanilla pudding mix
1 cup sugar
1 cup white chocolate chips
1 cup broken Andes Mints
green food coloring
Instructions

Preheat oven to 350 degrees.

Cream together butter and sugar, then add in dry instant pudding mix, and mix to combine.

Add the eggs, vanilla, and baking soda. Mix well.

Add flour, mix.

Add the green food coloring. You be the judge on this, as to how green you want it. We did about 10 drops.

Stir in the Andes mints and the white chocolate chips.

Place on a greased baking sheet, and cook for 10-12 minutes at 350 degrees.
