Hawaiian Meatball Subs - Our Kind of Wonderful

Hawaiian Meatball Subs

By nature I’m not a sandwich fan – at all. But, these sounded too good to pass up!

After making a huge mess preparing these, K (the husband) and I sat down to chow down, only to realize that I made the meatballs so big that the sandwiches were, literally, too tall to take a bite of, haha.

After some finangling we figured it out, and enjoyed these delicious subs!

Hawaiian Meatball Subs - Our Kind of Wonderful

Ingredients

–Meatballs–

1 Tbsp. butter

1/2 cup minced onions

1 lb. ground turkey burger, thawed

3 slices fresh bread, crusts cut off, and torn into small pieces

1 egg

1 1/2 tsp. salt

1/2 tsp. pepper

1/4 tsp. allspice

1/4 tsp. nutmeg

–Aloha Pineapple Sauce–

1/2 cup pineapple juice

1/4 cup packed brown sugar

2 tablespoons white vinegar

2 tablespoon low sodium soy sauce

1 teaspoon Sriracha/Asian hot chlii sauce

2 teaspoons cornstarch

1 teaspoon freshly grated ginger

2 garlic cloves, minced

–Easy Sweet Chili Sauce–

1/4 cup mayonnaise

1 teaspoon Asian/Thai Sweet Chili Sauce (like Mae Ploy)

A few dashes Sriracha/Asian hot chili sauce

–Snow Pea Slaw–

12 snow peas, ends trimmed, thinly sliced and cut in half

1 1/2 cups cabbage, chopped

1 small carrot, peeled and shredded

1 small red bell pepper, thinly sliced and cut in half

2 green onions, chopped

1 tablespoon mayonnaise

1 tablespoon pineapple juice

1 tablespoon lime juice

1 teaspoon rice vinegar

Salt and pepper to taste

Instructions

–Meatballs-

Preheat oven to 350 degrees.

Spray a baking sheet and set aside.

Melt 1 Tbsp. butter in a large skillet over medium heat. Add the minced onions and cook for 5 minutes. Pour minced onions into a medium sized bowl and let cool.

Once the minced onions are cool add the turkey, bread, egg, salt, pepper, allspice, and nutmeg to the onion mixture, and stir with a wooden spoon until mixed well, and the ingredients are sticking together, about 2 minutes.

With clean, damp hands roll the mixture into 2 inch balls and place on the baking sheet.

Bake until the bottoms are slightly brown, and meatballs are firm, about 20 minutes.

–Snow Pea Slaw–

Combine all ingredients in a large bowl, then refrigerate until ready to use.

–Sweet Chili Sauce–

Whisk together ingredients in a small bowl and lightly brush on both sides of rolls. Top bottom side of rolls with single layer of pineapple, cutting to fit rings as necessary. Set aside.

–Aloha Pineapple Sauce–

Whisk together pineapple juice, brown sugar, vinegar, soy sauce and cornstarch in a medium bowl. Set aside. Heat 1 teaspoon olive/coconut oil over medium heat in a large nonstick skillet. Add ginger and garlic and saute for 30 seconds Add whisked together Aloha Sauce ingredients and bring to a simmer. Once sauce begins to thicken, add baked meatballs, reduce to medium low and continue to simmer 5 minutes, spooning sauce over meatballs as it simmers.

–Assembly–

Top pineapple lined rolls, with 3-4 meatballs (or whatever fits your roll). We needed to cut our meatballs in half to actually be able to eat this, but, apparently I make the meatbalsl pretty huge. Sprinkle evenly with cheese and broil until buns are golden and cheese is melted. Top with Snow Pea Slaw and enjoy!
