Honey Balsamic Lamb Chops
Almost a year ago we bought lamb chops, and they’ve been in our freezer ever since. I decided to surprise K and cook him some lamb, while I had spaghetti of course, and these were a huge hit for him. I can’t vouch for them, as I don’t like lamb, but he wanted to use the rest of the lamb to have these the next night too, so I’d call that a win :]
Ingredients
4 lamb chops
pepper, to taste
sea salt, to taste
2 Tbsp. olive oil
1/4 cup balsamic vinegar
1 Tbsp. honey
1 Tbsp. grainy mustard
1 clove of garlic
1 – 2 tsp. rosemary
Instructions

Dry lamb chops after removing them from package.

Salt and pepper both sides of the chops.

In a small bowl whisk, vinegar, mustard, garlic together.

Heat olive oil in in a frying pan on high and add rosemary; place each chop down, sear both sides.

Pour vinegar mixture into the pan and reduce heat to low.

Heat the chops, turning once or twice evenly coating them in the vinegar. Once the vinegar mixture has thickened, the chops should appear sticky.

Remove from the pan and allow to rest for 5 minutes before serving.
