Huevos Rancheros
I’ve had Huevos Rancheros on our menu for months, but always end up making something else, because I was sure I wasn’t going to like them. Guess what? I was wrong, these are so simple, filling, and so good! Both K and I were shocked that i was asking to have them again the next day. This is definitely a recipe worth trying.
Ingredients
4 – 6 eggs
8 inch tortilla shells
1 can of black beans
1/4 cup water
1 tsp. chili powder
1/2 tsp. cumin
1/4 tsp. oregano
mixed cheese, to taste
diced tomatoes, to taste
avocado pieces, to taste
chopped cilantro, to taste
sour cream, to taste
salsa, as desired

Fry or scramble your eggs.

While the eggs are cooking heat up your black beans on the stove, adding in the 1/4 cup water, 1 tsp. chili powder, 1/2 tsp. cumin, and 1/4 tsp. oregano.

Heat up your tortillas.

To assemble, place your eggs on the tortilla, then top with cheese, beans, tomatoes avocados, cilantro, sour cream, and salsa, as desired. Dig in and enjoy!
