Mom’s Fajitas
I grew up with my mom making these fajitas, and they’ve always been a favorite. The first time we sat down to dinner to have Fajitas, using this recipe, K looked at me like I was crazy. After rolling my eyes at him he tried them, and he now loves them just as much as I do.
Ingredients
–Meat–
3 lbs. steak
2 cups picante sauce
1/2 cup vegetable oil
2 tsp. lemon juice
dash pepper
dash garlic powder
12 flour tortillas
sour cream
–Chunky Guacamole–
6 avocados, diced
3 medium tomatoes, chopped
1 cup chopped onion
3/4 cup salsa or picante sauce
1 Tbsp. lemon juice
3/4 tsp. salt

–For the Meat–

Pound meat with a meat mallet to tenderize; place in a plastic bag. Add picante sauce, vegetable oil, lemon juice, pepper, and garlic powder. Refrigerate for 3-24 hours, turning several times. BBQ or broil meat until done. Slice into thin strips.

–For the Guacamole–

Combine all ingredients, refrigerate until you’re ready to serve. Place meat on tortillas; top with Chunky Guacamole and sour cream
