Pineapple Fried Rice - Our Kind of Wonderful

Pineapple Fried Rice

Fried rice is good, but after a while it just gets a bit old and you want something different. That’s where Pineapple Fried Rice comes in. This stuff is delicious! You could add an egg like you do with classic fried rice too, and that would be tasty too,

Pineapple Fried Rice - Our Kind of Wonderful

Ingredients

3 cups cooked rice

3/4 lbs. boneless chicken breasts, cut into bite sized pieces

1 Tbsp. olive oil, divided

1/2 cup finely chopped onion

1/2 cup matchstick carrots

1/2 cup chopped red bell peppers

1/2 cup frozen peas

1 cup diced fresh pineapple

3 Tbsp. soy sauce

crumbled bacon bits, for topping, if desired

Instructions

Grab a wok, heat 2 Tbsp. of oil over medium high heat. Once it’s heated add in the chicken, and saute until it’s browned and cooked through – about 4-5 minutes.

Remove the chicken from the pan, set aside. Cover to keep it warm.

Wipe out the wok, then add the rest of the oil. Heat again over medium high heat.

Add in the onion and matchstick carrots, then cook until softened, about 3-5 minutes.

Stir in the red pepper, pineapple and bacon if you’re adding it, then cook for 2-3 more minutes so the flavors can all mesh together.

Add the cooked rice, chicken, and frozen peas to the wok. Stir in the soy sauce and mix until combined.

Serve immediately.
