Pork Rice Bowls
These pork bowls are so tasty, and colorful, which makes my heart happy. I love color, and sitting down to dinner with a plate looking like this is a huge win, add on top of the amazing colors that it’s delicious and we have a new go to meal.
The pork cooks in the crock pot, and the veggies are steamed, so it’s a super easy meal, and looks like it took you much more time. So, invite the in-laws over and impress them with this fancy looking, easy, delicious dish.
Ingredients
1 4-pound pork shoulder roast
1 tablespoon liquid smoke
2 tsp. cinnamon
1 tablespoon Himalayan pink salt
2 medium zucchinis
2 medium yellow squash
1 cup shredded carrots
1 cup thinly sliced red cabbage
cooked brown or white rice
sesame seeds (optional)
1 bottle teriyaki sauce
–Orange Sriracha Crema–
3/4 cup sour cream, divided
1/4 cup mayonnaise, divided
3 tablespoons orange marmalade
2-4 teaspoons Sriracha, more or less to taste
1 tablespoon lime juice
1/4 cup loosely packed cilantro, chopped
Instructions

To cook the pork spray your slow cooker with nonstick spray, then place the pork roast in the slow cooker.

Pour the liquid smoke over the roast, then sprinkle with the salt and cinnamon.

Cover and cook on low for 8-12 hours, or high for 4-6 hours. When pork is done, shred it with two forks.

Using a spiralizer, spiralize your veggies, then boil or steam them until they are tender. (If you don’t have a spiralizer you can chop them up instead)

Warm up your teriyaki sauce on the stove.

For the Orange Sriracha Crema combine all ingredients, stirring well until there are no clumps. Refrigerate until ready to use.

Put together your pork bowls with rice on the bottom, then add the shredded pork, and veggies. Top with teriyaki sauce, sesame seeds, and orange sriracha crema. Enjoy!
