Terri’s Chicken Salad
Growing up we’d have these chicken salad sandwiches when we went to Flaming Gorge, and mostly only then, so they were a huge treat. I don’t like croissants, or mayo, so it’s weird that I love these, but I totally do. They are some of my favorite sandwiches, and are so easy to make it’s ridiculous. I introduced K to them, and now we make them every summer, and I promise him that one day we’ll go to the beach and eat them there like when I was growing up.
Ingredients
4 cups cooked, cubed chicken
2 cups grapes, halved
1 cup olive oil mayonnaise
1 cup slivered almonds
1/2 cup diced celery
croissants, for serving
Instructions

Combine all ingredients, serve on sliced croissants.
