Turkey Swedish Meatballs with Cranberry Sauce

Let’s be honest, finding a good meatball is not a small feat. I’d never had one that didn’t make me want to gag, but these are soo good! Like, good enough that I make them because I want them, not just because K (the husband) likes them, and that is huge. They aren’t at all overpowering, are so filling, and reheat beautifully.

Ingredients

1 Tbsp. butter

1/2 cup minced onions

1 lb. ground turkey burger, thawed

3 slices fresh bread, crusts cut off, and torn into small pieces

1 egg

1 1/2 tsp. salt

1/2 tsp. pepper

1/4 tsp. allspice

1/4 tsp. nutmeg

–Cranberry Sauce–

1/2 cup fresh cranberries

1/2 cup apple juice

1/4 – 1/2 cup pure maple syrup

1 1/2 to 2 Tbsp. brown sugar

1/8 cup chopped walnuts

Preheat oven to 350 degrees. Spray a baking sheet and set aside.

Melt 1 Tbsp. butter in a large skillet over medium heat. Add the minced onions and cook for 5 minutes. Pour minced onions into a medium sized bowl and let cool.

Once the minced onions are cool add the turkey, bread, egg, salt, pepper, allspice, and nutmeg to the onion mixture, and stir with a wooden spoon until mixed well, and the ingredients are sticking together, about 2 minutes.

With clean, damp hands roll the mixture into 2 inch balls and place on the baking sheet. Bake until the bottoms are slightly brown, and meatballs are firm, about 20 minutes.

Once done baking, top with cranberry sauce and serve.

Combine all ingredients in a saucepan, bring to a boil. Boil for 5-10 minutes, then turn to low, and continue cooking, while stirring for 5-10 more minutes. Serve on top of meatballs.
