Best Ever Potato Soup
I am kind of a potato soup snood. It has to be creamy, have lots of potatoes, and be something I crave seconds for if I am going to consider calling it a good potato soup. This one is on par with all of that! I discovered this a while ago, and made it right as K (the husband) and I were getting sick, and oh my lanta, makes me want to be sick again so I can have soup! We LOVED it! It reheats well too, just add a bit more cream and water and stir as you’re heating it up to make sure it still has a soup consistency.
Ingredients
8 cups chicken broth
8-10 potatoes, washed, peeled, and cubed
2 cups cheddar cheese
1 cup instant potato flakes (more if wanted)
2-3 cups whipping cream
2 onions, diced
salt and pepper, to taste
2 cups smoked, chopped ham (optional)
Instructions

Pour broth in soup pot and put over medium heat.

Peel and chop the onions and potatoes, then add to broth along with the ham if you’re using ham. (we didn’t) Season to taste with salt and pepper.

Bring the mixture to a boil, then reduce the heat and cover. Let simmer for 10-15 minutes, or until the potatoes are tender, then remove the lid and stir in the potato flakes.

Add the cheese and cream and continue to cook, being sure to stir constantly, until it is just heated through.

Serve immediately and top with your favorite toppings. (We topped with chives)
