Crock Pot Honey Buffalo Meatballs
K is a huge meatball lover, and I’m always looking for new recipes to try, and to surprise him with, so when I found this recipe I was so excited to show him! These meatballs definitely have a bit of a kick to them, but you can adjust that as desired with more or less hot sauce. We have these with mashed potatoes or potato wedges.
Ingredients
–Meatballs–
2 lbs. ground turkey burger
2 eggs
22 crushed saltine crackers (about 1 cup crushed)
1/3 cup dry minced onion
1/3 cup milk
1 Tbsp. brown sugar
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. salt
1/2 tsp. chili powder
1/2 tsp. smoked paprika
1/2 tsp. cumin
1/4 tsp. pepper
–Sauce–
1/4 cup Frank’s Red Original Hot Sauce
1/4 cup + 1 Tbsp. honey
1/4 cup apricot preserves
1/4 cup brown sugar
2 Tbsp. soy sauce
1 1/2 Tbsp. cornstarch

Preheat oven to 450 degrees.

Grab a large bowl, add the eggs and gently whisk. Add the rest of the meatball ingredients and mix until combined. You can use your hand to mix if that’s easier. Roll the meat mixture into your desired meatball size. We tend to do some larger meatballs, but you can do small ones to, whichever you prefer. Put the meatballs on a sprayed baking sheet, and bake for 20 minutes (for large) or 8 min (for small) meatballs.

While the meatballs are baking combine all of the sauce ingredients in a bowl, and whisk to combine. (You’ll only use 1/4 cup of the hot sauce, you can add more as desired before serving).

Put the slow cookers in the bottom of your crock pot, then top with the sauce. You can layer as needed, meatballs, then sauce, then meatballs, then sauce.

Cover and cook on low heat for 2 hours, gently stirring an hour after cooking. Add additional hot sauce as needed. We like to serve these with mashed potatoes, or potato wedges.
