Crockpot Jambalaya
K loves Jambalaya, and now that A is here having the time to actually cook Jambalaya isn’t so easy. I found this amazing recipe where it’s all done in the crockpot, and K says it’s amazing, so it’s a huge win for me. This is our new go to Jambalaya recipe, and I love that […]
Coconut Chicken with Apricot Sauce
For our first anniversary I left work early, and surprised K with this meal when he came home. It was quite a surprise, as the ride I’d arranged to bring him home forgot, so it ended up being an interesting night, but we at least had this amazing meal. K has turned me into a […]
Chicken Fajita Bowls
These Chicken Fajita Bowls seem like a lot of work, but they really aren’t that bad, and they taste so good! They also reheat well, and are a meal that you can eat for a few days in a row without getting sick of it, which is always a win in my book.
Baked Lemon Pasta with Chicken
This baked lemon pasta with chicken is such a refreshing alternative to the regular pasta meals we have. If you aren’t big on lemon then you can simply scale back a bit on the lemon, and maybe add some more garlic. We served ours with some grilled chicken breasts that were seasoned with Salad Supreme […]

Sweet Potato Nachos
I’d just worked out and needed to get some dinner ready for when K got home – the plan was Nachos, but I just wasn’t feeling it. Especially having all of those chips after just busting my butt. Well, that’s where sweet potato nachos came in, and they were DIVINE. Sweet Potato Nachos will definitely […]
Crock Pot Enchilada Soup
I was skeptical of this soup, since it takes green enchilada sauce, and I’m not a green enchilada sauce type of girl. Well, at least with this soup, I am now! We topped ours with shredded cheese only, and ate it paired with a salad and some tortilla chips, and let me just tell you, […]
Cajun Shrimp Corn Chowder
Another great recipe for cold days! This chowder reheats well, and was perfect for K to take for lunch. It’s quite creamy with the instant potatoes, but if you prefer even creamier you can throw some of it in the blender before you add the cream and shrimp, depending on preference.
