Creamy Chicken Alfredo Pasta Bake

The last time we had this Chicken Alfredo Pasta Bake was about 3 years ago. I have no idea why it took us so long to make it again, but we finally did and it’s amazing. We both remembered loving it, but didn’t remember just how good it is! So, pretty much, this recipe is amazing, you’ll want seconds and thirds, and you should definitely make it. Probably double it, that’s how good it is.

Creamy Chicken Alfredo Pasta Bake - Our Kind of Wonderful

Ingredients

16 oz. package penne pasta

4 Tbsp. butter

2 cups whipping cream

1 cup whole milk

2 cups freshly grated parmesan cheese

2 chicken breasts

Lemon pepper seasoning, for grilling the chicken

1/2 cup chicken broth

1/8 tsp. garlic powder

1/2 tsp. thyme

1/2 tsp. oregano

salt and pepper, to taste

1 cup mozzarella cheese, grated

1/2 cup bread crumbs

red pepper flakes, to taste

You’ll be using the broiler setting on your oven, so go ahead and preheat it.

Grill your chicken, seasoning with lemon pepper.

Once the chicken is grilled start cooking your pasta according to package directions.

In a large skillet melt the butter, over medium heat, then add 2 cups whipping cream and 1 cup milk. Sprinkle in 2 cups of shredded parmesan cheese and stir. Bring it to a simmer over medium high heat, stirring so it doesn’t burn. After it’s been a few minutes the sauce will start to thicken.

Chop your chicken breasts into bite-sized pieces. Once chopped add the chicken to the sauce, then add in 1/2 cup chicken broth, 1/8 tsp. garlic powder, 1/2 tsp. thyme, and 1/2 tsp. oregano. Stir to combine, then add in the salt and pepper, to taste. Let the sauce simmer for 3-4 minutes, allowing the sauce to thicken.

Grab a 4 quart casserole dish and spray it with cooking spray. Place your cooked pasta into the dish, then pour the sauce over the top.

Grate 1 cup of mozzarella cheese and sprinkle it all over the top of the pasta and sauce. Then sprinkle 1/2 cup of bread crumbs over the top of the mozzarella cheese.

Put the dish in the oven, watching it carefully. When the cheese is bubbly and the crumbs are lightly toasted, about 5 minutes, remove the pan from the oven, top with red pepper flakes, and serve immediately.
