
Homemade Mac & Cheese

In college I minored in culinary arts – I’ve always loved to cook, and always been quite good at it. However, I have never, and I mean never, been able to master box macaroni and cheese. I’m not even kidding you, when I try to make it I end up spitting it out and sulking until K (the husband) takes pity on me and makes a new batch.

Ingredients
1½ cups macaroni (uncooked)
1 cup milk
2 Tablespoons flour
1¼ cups shredded cheddar cheese
1/2 tsp. salt
⅛ teaspoon black pepper
dash of dried mustard
Instructions

In a medium saucepan, cook macaroni according to package. Drain and set aside.

Whisk together milk and flour in the pan and cook over medium heat, stirring constantly, until thickened. (This will take about 2 minutes.)

Add cheese, salt, pepper and mustard. Stir until smooth.

Mix in cooked macaroni.

Remove from heat and let stand about 5 minutes.
