Manicotti
Another awesome recipe from my mom! Manicotti was one of my favorite meals growing up, and is still one of my favorite comfort foods to have every once in a while. We like to pair ours with brussels sprouts or green beans, and rolls. This recipe is actually really fast and easy too, which is a huge perk.
Ingredients
12 large manicotti shells
4 cups shredded mozzarella cheese, divided
2 cups ricotta cheese
2 Tbsp. dried basil
1 26oz jar Spaghetti Sauce
1/2 cup grated parmesan or romano cheese

Preheat oven to 350 degrees. Spray 13″x9″ baking dish with nonstick cooking spray. Spoon 2 cups of spaghetti sauce into the basking dish.

Cook pasta according to package directions. Drain; rinse with cool water. Let pasta dry a bit on paper towels.

In a medium bowl stir together 3 cups mozzarella with the ricotta and basil. Stuff the pasta shells with the cheese mixture (I just use my fingers and a spoon, but you can put the cheese mixture into a large , heavy-duty zip lock bag. Seal the bag, then cut off one corner, making the cut about the same size as the manicotti opening, then gently squeeze the bag to fill the pasta with the cheese mixture.)

Place stuffed pasta in baking dish, over the sauce. Pour remaining spaghetti sauce over the top of the pasta. Sprinkle with remaining 1 cup of mozzarella cheese.

Bake at 350 degrees for 15 minutes. Sprinkle with parmesan cheese. Bake for 10 minutes longer. Serve immediately.
