Slow Cooker Corned Beef Brisket Pitas

K loves corned beef, me not so much, but he is a huge fan. I found this recipe and decided to surprise him with it for lunch one week. He couldn’t stop raving about it. He’s always grateful for what I prepare, and says thank you, but he rarely brings it up over and over again, but with these he did. These were a HUGE hit, and are something I’ll definitely make for him again. I undercooked the potatoes slightly, that way when he reheated it they were perfect.

Slow Cooker Corned Beef Brisket Pitas - Our Kind of Wonderful

Ingredients

4 lb Corned Beef Brisket coated in spices

4 medium russet potatoes, quartered

–Creamy Radish Dressing–

5 red radishes

1/2 tsp. minced garlic

1/4 cup loosely packed cilantro

1/2 cup mayo

1/2 cup sour cream or Greek yogurt

2 tablespoons Dijon mustard

1 tablespoon lemon juice

1 teaspoon dried dill

1/2 teaspoon salt

1/4 teaspoon pepper

–Pitas–

1/2 head purple cabbage, chopped

10 pitas

1/2 cup grated parmesan cheese

Instructions

Cook brisket in the crock pot, according to package directions, leaving the fat on, which you’ll trim after cooking. Skin and chop your potatoes, and cook with the brisket in the crockpot.

Meanwhile, add radish dressing ingredients to a blender or food processor. Blend until smooth. Store in the refrigerator.

When ready to serve, remove brisket from slow cooker and scrape fat off. Cut across the grain into 1/2″ strips. Transfer corned beef to a plate and cover tightly with foil while you prepare the potatoes and pitas.

Strain potatoes from the slow cooker and reserve 1/4 cup of the slow cooker spiced water. Add potatoes to a large bowl and mash with 1/2 cup Parmesan cheese and the 1/4 cup reserved slow cooker water. Cover with foil.

Toast pitas by heating a drizzle of olive oil in a skillet over medium heat. Cook approximately 1 minute per side, or until warmed and golden.

Assemble pitas by layering mashed potatoes, corned beef, cabbage then drizzling with dressing.
